Haleem is a traditional dish of South Asian and Middle Eastern cuisine, made with wheat, barley, meat (typically mutton or beef), and a mixture of spices. Here's how you can make it at home:
Ingredients:
- 1 pound boneless mutton or beef, cut into small pieces
- 1 cup wheat
- 1/2 cup barley
- 1 large onion, chopped
- 4 garlic cloves, minced
- 1 inch ginger, grated
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 2 cardamom pods
- 2 cinnamon sticks
- 4 cloves
- 2 tsp chili powder
- 2 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- Salt to taste
- 8 cups water
- 2 tbsp ghee
- 2 tbsp fresh cilantro, chopped (for garnish)
- 1 lemon, cut into wedges (for serving)
- In a large bowl, soak the wheat and barley overnight in plenty of water.
- In a large pot, heat the ghee over medium heat. Add the onion and cook until golden brown, about 5 minutes.
- Add the garlic, ginger, cumin seeds, coriander seeds, cardamom pods, cinnamon sticks, and cloves. Cook for another 2 minutes, stirring constantly.
- Add the mutton or beef and cook until browned, about 5 minutes.
- Add the chili powder, turmeric powder, cumin powder, coriander powder, and salt. Cook for another 2 minutes.
- Drain the soaked wheat and barley and add it to the pot along with 8 cups of water. Bring to a boil and then reduce heat to low.
- Cover the pot and let it simmer for 2-3 hours, stirring occasionally, until the meat is tender and the wheat and barley have broken down into a porridge-like consistency.
- Use a potato masher or the back of a spoon to mash the mixture to a smooth consistency.
- Serve hot, garnished with fresh cilantro and a squeeze of lemon juice.
